Cut the beef fillet finely with a knife and then transfer it to a bowl.
Dress the meat with lemon juice, extra virgin olive oil, a teaspoon of mustard, salt, pepper and a few leaves of herbs.
Stir well and allow the meat to take on flavour.
Serve the beef chop with the help of a pastry rings and press well with the back of a spoon.
Make some flakes of Fontina PDO and keep them aside.
Garnish with the flakes of Fontina PDO, capers and a grind of black pepper.
