Controls

Fontina has a quality that is certified and guaranteed three times over

Before becoming Fontina PDO, in fact, the cheeses must pass particularly strict controls.

A control activity is carried out by a third party, authorised by the Ministry of Agricultural, Food and Forestry Policies, concerning compliance with the product specification and controls are performed on the entire production chain.

From stable to finished form

Following the positive outcome of the inspections, a branding authorisation is issued for PDO-eligible products.

Only after this authorisation does the Consortium proceed with the expertisation of the batches and subsequent branding.

After assessing the consistency of the shapes at a tactile level, by experts identified by the Consortium entered in a special register and entrusted with the controls, careful coring is carried out in production, on a sample basis, per batch, to verify that the softness is within the standard.

Flexibility is also assessed on the sampling (the cheese must stretch, the ends must touch but not break between the fingers).

At that point, the Fontina is ready to be branded and labelled.

A Fontina cheese that passes all controls and is ready for marketing typically weighs between 7.5 and 12 kilos and has a diameter of 43 centimetres. Its rind is firm, brown in colour.

The numbers of Fontina PDO:

The first and main quality indicator that is placed on the wheel is, in the centre of the Fontina, the branded stamp certifying that it has been produced in compliance with the product specification. And that it has also passed the expert evaluation of the branding commission of the PDO Protection Consortium.

Just below the stamp, then, again at the top of the form, is the marker number Consorzio Tutela Fontina (CTF). Each CTF number corresponds to a member producer of the Consortium. This information can also be requested in specialised sales outlets and can also be found on the website in the Manufacturers section.

The last certification visible on the form is then the casein plate with the identification number allowing complete traceability of the cheese, the day of production and the provenance of milk transformed.
