How to preserve Fontina PDO

Fontina can be stored in the cellar or in the refrigerator.

In the cellar, it is necessary to place the cheese in a humid room at temperatures not exceeding 10-12°C, preferably on a wooden board. Periodically the cheese should be rubbed with a cloth dampened with water and salt to eliminate the normal formation of white mould on the rind. If the room is too dry, it is advisable to wrap the cheese in a damp cloth.

In the refrigerator, wrap the slice in cling film or greaseproof paper, taking care to ensure that it adheres well to the cut side of the cheese, to preserve its initial moisture; place it in the least cold area of the refrigerator.

We also remind you that the best temperature for tasting Fontina PDO, in order to exalt its flavour and aroma, is around 16°C; therefore, it is advisable to take it out of the fridge before the time of consumption.
