Start by preparing gnocchi.
Boil the potatoes and mash them while still hot. In a bowl, mix potatoes, a pinch of salt and flour a little at a time. Make a lump of dough and then loaves. Cut them into small pieces and slide them over a fork to give them the classic gnocchi shape.
Cook the gnocchi in plenty of salted water and drain them when they rise to the surface.
Dice Fontina PDO, removing the rind.
Heat the milk in a saucepan and then add Fontina PDO. Melt the cheese while stirring. Add salt and pepper to taste.
Dress the gnocchi with Fontina PDO sauce and garnish with a grind of black pepper.
