The “FontinaMI” initiative promoted by the Fontina PDO Producers' and Protection Consortium in eight restaurants in Milan was a huge success. Here are the recipes of FontinaMI.
From 21 to 27 February 2022, the “FontinaMI” initiative was held in Milan, conceived by the Fontina PDO Producers' and Protection Consortium to let the public discover new uses and interpretations of Fontina PDO, particularly Alpine pasture cheese.

Fried, melted, in mousse, in carrozza or even in powdered form, in unusual combinations with Mazara prawns, liquorice, macaroons, Fassona, cardoons, tongue or horseradish sauce worthy of the best extreme-tasting, the dishes proposed met with the interest of the public who also received a taste of the cheese in purity to better appreciate the versatility of Fontina
